Growing up in San Francisco means chocolate runs deep in our blood. Corners of the city even carry an air of it. And over the years, our gourmet city has exploded with new chocolate varieties that complement the next one.
But the chocolate that shines the brightest are the ones with the special stories. The ones whose origin story is just as sweet as the product itself. And I have been lucky to recently experience one by the name of Cailler.
Cailler is a beloved Swiss chocolate brand that has delighted its European fans since 1819. Known for its distinctive, rich creamy flavor using local, condensed Alpine milk (instead of powdered milk which is typically used for most chocolate production), expert craftsmanship and sustainable process, and the magical Maison Cailler at the door of the Swiss Alps where this chocolate is made, Cailler is now sharing its love for chocolate in the United States.
This week, Cailler opened the doors of its new pop up chocolate shop and on opening night offered an unforgettable experience for any chocolate lover – a chocolate and wine pairing with all of Cailler’s most loved chocolates and specialty and local wines selected by San Francisco culinary gem A16, a lovely chocolate making demonstration by Cailler’s master chocolatier and Swiss champion chocolatier, Geraldine Maras, a virtual reality tour of Maison Cailler, and a custom laser cutter to make personalized holiday cards.
The Cailler chocolate and wine pairing was extraordinary. Each chocolate is excellent on its own but the wines brought out the extraordinary flavors even more so. My favorite pairing, hands down, was the dark chocolate salted caramel crunch with the local reisling by Stony Hill Vineyards. The dark chocolate is so creamy and had no trace of bitterness I usually encounter. And the crunch is perfect.
Cailler’s special pop-up shop and chocolate experience will continue in San Francisco through December 21st at 117 Post St near Union Square. It’s so amazing, and the chocolate is so heavenly, I hope you stop by!
