    Theo is officially back in school and as a working mom that means I need to line up some fast but good for you dinner options every week. And since we love all things Autumn, I try to use seasonal produce to teach the kids about what fruits and vegetables are actually in season. Pasta (gluten free if possible, since Theo and my husband are gluten sensitive) is always a fan favorite, as is any dish with Pancetta (Fiorucci is our fave – we pick up a few packets from our neighborhood Safeway), and butternut squash is one of the best Fall foods ever, next to pumpkin.


    So with all of that, today I’m sharing my 20 minute Gluten Free Butternut Squash Pancetta Pasta Recipe for an awesome and easy dinner for the family or just for my fall food loving friends out there.

    20 Minute Gluten Free Pasta Recipe: Butternut Squash Pancetta Pasta

    Ingredients
    1 package of Gluten Free Pasta (we used Fusilli but any favorite pasta will do)
    1 Package Fiorucci Diced Pancetta
    1 Jar of Butternut Squash Pasta Sauce
    4-6 fresh sage leaves, chopped
    Fresh Parmesan Cheese (topping)

    Directions

    Step 1:
    Cook gluten free pasta in boiling water for 8-10 minutes (until al dente)

    Step 2:
    Drain pasta and set aside

    Step 3:
    In the same pot, add diced pancetta and cook until browned on all sides

    Step 4:
    Chopped sage and cook until crispy

    Step 5:
    Add butternut squash pasta sauce, stir, and simmer for 10 minutes to allow flavors to blend together.

    Step 6:
    Add pasta to sauce and thoroughly mix together

    Step 7:
    Serve into bowls and top with parmesan cheese, extra pancetta, and fresh sage garnish
