Homemade Popsicles post Sponsored by ZICO Coconut Water
Summer is popsicle season in our home, and this year I wanted to try lower sugar, equally yummy fresh fruit options for my family and friends. And since coconut water is a daily favorite, I decided to mix ZICO® Coconut Water with some organic Summer fruits for a new icy treat.
Perks of using coconut water for popsicles: ZICO® Coconut Water contains 5 electrolytes: sodium, magnesium, calcium, potassium, and phosphorus, that help keep you hydrated. Coconut water is naturally gluten-free, lactose-free, and cholesterol-free and full of potassium (as much as a banana!). The coconut water keeps the pops light and refreshing but has a hint of sweetness. I’m a citrus girl so adding lime juice and lime zest is a must, and balances out the sweet organic fresh fruits we picked for this recipe – white peaches, kiwis, and blackberries. Any and every other fruit would taste heavenly with this coconut water + lime juice combo, and I’d love to try more kinds later this season.
As for the popsicle mold, we try to minimize our use of plastic anything, so these stainless steel popsicle molds have been awesome and so easy to clean.
This recipe literally took me minutes to whip up and only a few hours to freeze, but the end result looks prettier and tastier than all those store bought popsicles I’ve ever tried. My niece tested them out this weekend and loved it, so I’m taking that as a major win.

Recipe: Kiwi Blackberry White Peach Coconut Water Homemade Popsicles
MAKES 8-10 COCONUT WATER POPSICLES DEPENDING ON THE SIZE OF YOUR MOLDS
A fresh, fruit filled popsicle that’s 100% natural and super hydrating.
15 min Prep Time 2 hr, 15 Total Time
Ingredients:
1 1/2 cups/360ml Zico coconut water
The juice of 1 large lime
The zest of one lime 2 kiwis, peeled and sliced into 1/4-inch rounds
2 white peaches or nectarines, thinly sliced
1 3oz package of blackberries
Instructions:
1. Whisk together the coconut water, lime juice and lime zest.
2. Arrange some of each fruit in your Popsicle molds.
3. Pour the lime flavored coconut water into each mold to cover the fruit.
4. Cover with lid or foil and place your wooden sticks.
5. Freeze until solid.
6. Run mold under warm water briefly to unmold and serve immediately.
