it takes a good hour longer for my brain and body to warm up on monday mornings. so, to set me in motion, a cup of philz coffee & a hearty breakfast are a must.
i can make my coffee with my eyes closed at this point. my ongoing struggle, however, is with breakfast. eggs don’t sound as good as they used to, bread is a cardinal sin, cereal/granola feels like an anchor in my tummy and a girl can eat only so much fage yogurt, honey & fruit.
so when i discovered a quick, delicious and healthy breakfast recipe with my favorite miracle food, quinoa, i was beyond ecstatic. i think i told ten of my friends and colleagues….and endured a hellacious trip to trader joe’s just to stock up on enough ingredients for my new monday breakfast.
the best part about this recipe? it is super versatile – you can use any fruit or nut combination you want. and it takes maybe 20 minutes tops to make. and it keeps you full until lunch.
so, for my fellow healthy friends and quinoa fans, this recipe is for you.

1/2-3/4 cup almond or soy milk ~ vanilla flavored
1 teaspoon unsalted butter
1 tablespoon honey
1 teaspoon cinnamon
1/3 cup golden raisins, cranberries or fruit of your choice
1/4 cup toasted almonds or nut of your choice
at this point, cover and lower heat to just a simmer.
Agreed, this is my favorite thing to eat for breakfast and I look forward to waking up and eating it. Great recipe.
