did you know that today is national iced tea day? what a terrific excuse to sit on a patch of grass in the park with your favorite book and a cool glass of your favorite iced tea! for yours truly, lately i can’t get enough of my favorite pineapple iced tea from gobo. it is perfectly sweetened by the pineapple puree and it is pure heaven.
and when i’m not in nyc, i live by this little recipe to get me through the warm summer days. sometimes i’ll add a sprig of basil or a little ginger, too. 🙂

* 6 tea bags
* 1/2 cup sugar
* 4 cups boiling water
* fresh mint
* juice of 3 lemons
* 5 tablespoons pineapple juice
Preparation:
Place tea bags and sugar in a 2-quart pitcher.
Add 4 cups of boiling water.
Steep for 15 minutes.
Remove tea bags.
Steep fresh mint leaves in tea for at least 3 minutes.
Remove mint leaves.
Add lemon and pineapple juices.
